Wonderfully simple recipe with equally wonderful results. Multiple family members with various food allergies or intolerances and this recipe fills the bill on both counts. Taste, texture and appearance were all very good. We did use eggs this time, but will try substituting flax eggs next time. Used maple syrup, but will next experiment with honey. Used yogurt instead of oil Added currants and craisins which helped add some nice texture. I prefer this over our old family banana bread recipe and the fact that it is far healthier is an added bonus. Thanks!!
