Learn how to make the most delicious healthy oatmeal cookies – no flour, no gluten, using high-quality ingredients you already have at home. I’m sharing four different ways and recipes for the best oatmeal cookies because once you have a bite of the recipe with chocolate chips you’ll want to make them again and again and again.

And at some point, you’ll want to have some variety. Speaking from experience here, that’s what happened to me – I’ve been making a batch of flourless oatmeal cookies every week for the last few years. And I’m not stopping.

Unlike many other baking recipes, these healthy oatmeal cookie recipes are super easy to throw together and they’re ready in about 20-30 minutes. So let’s get started!

What Are Oatmeal Cookies

Well, they’re cookies made with oats and without regular flour. The oats act as the flour in the recipe, which makes the cookies more nutritious, rich in fiber and gluten-free when you use gluten-free oats.

Oatmeal cookies make a great healthy snack, whenever you need something to sweeten up your life. Or in some cases – something more savory. Did I mention, they also taste way better than store-bought cookies?

They basically melt in your mouth. And I’m saying this as a good melt – not the type that disappears in your mouth and you don’t know whether you just ate something or not.

Are Oatmeal Cookies Healthy?

In reasonable amounts they are! They’re actually a much healthier alternative to regular cookie recipes that use way more sugar and white flour. And they’re definitely better for you than store-bought cookies which are full of things you’d never actually buy in the grocery store if you’re living a healthy lifestyle.

The cookies are perfect for meal prep, as they store well in the fridge or even at room temperature.

Naturally whole-grain and gluten-free the flourless oatmeal cookies have a lower glycemic index than versions with more sugar and flour.

But, if you do want to make the sweet cookie varieties with less sugar, you can try using stevia or another sugar-free sweetener in the recipes as well.

So if you’re craving a snack, something sweet or something small that’s savory – make a batch of these. Having one or two a day will not get you off track and will prevent you from going on binges and eating an entire box of cookies in one sitting.

Healthy Oatmeal Cookie Base Ingredients

While the recipes I share below vary, you’ll only need a few basic ingredients to make the base of the oatmeal cookies. Here’s what you need for the basic recipe:

  • Oats. Use quick or regular oats for the recipe. We will be blending, so both types will work. Oats are a great way to sneak more fiber and some antioxidants into your diet and you’ll love their texture in the cookies too!
  • Egg. I usually make small batches, so all you need as a binding agent is one egg. If you’re vegan or can’t have eggs you can certainly make the cookies work without an egg as well, but you’ll need to add some nut butter, banana or a chia egg.
  • Coconut oil or butter. Do not skip these if you don’t want dry cookies.
  • Baking Soda. This will make the cookies rise up a bit.
  • Coconut sugar. You’ll need this ingredient to make the sweet variety of the cookies. Coconut sugar is apparently a bit more nutrient-dense than table sugar. It also brings a nice color and a wonderful hint of coconut flavor to the cookies. As I mentioned if you’re watching your carb intake, you can try adding stevia to the recipe instead of the sugar.

How To Make Healthy Oatmeal Cookies

Well, as I promised – making healthy oatmeal cookies is pretty easy!

All you need to do is:

  • add the basic ingredients to a bowl
  • blend together (I prefer a hand blender here) and leave some of the mixture unblended to make for a more chewy texture later
  • add in the rest of the ingredients for the version of cookies you chose
  • let the batter chill in the fridge for 5-10 minutes
  • Preheat the oven to 350F/180C, line a baking sheet with parchment paper and start shaping the cookies. What I do is I grab a tablespoon of the cookie dough, make it into a ball, place it on the cookie sheet and press down to shape the cookie. Please note that these types of cookies won’t change their shape as they bake. While shaping the cookies it really helps to keep your hands wet, so that the dough doesn’t stick to your skin.
  • Now that all the cookies have made it onto the baking sheet, it’s time to bake for about 10-15 minutes or until golden.
  • Let the cookies cool off a bit, they will become crispier on the outside as they cool off.
  • Enjoy!

How To Store And Refresh Oatmeal Cookies

You can store the cookies at room temperature for about 3 days and even longer if you leave them in the fridge. Just like other cookies, they do become softer with time when exposed to air, so what I do to “freshen them up” is I bake them for about 2-3 minutes, let cool off and they’re like brand new.

Now we come to the wonderful world of tasty oatmeal cookie flavors! And we’ve got some good ones – a classic chocolate chip, with peanut butter, with berries and a savory one with feta cheese.

Oatmeal Chocolate Chip Cookies

For this one add your base ingredients to a bowl, then stir in chocolate chips. Honestly, I usually never have and never use chocolate chips, so I simply chop up some dark chocolate into smaller pieces. Add that to the cookie dough, let chill, shape the cookies and bake for 10-15 minutes.

Blueberry muffin Oat Cookies

Ever crave a blueberry muffin, but don’t want to have an entire one as a snack? These blueberry oatmeal cookies are the solution you’ve been looking for.

Add some vanilla to the basic ingredients, blend and add in some fresh blueberries to the cookie dough. Let chill, make the cookies and bake for 10-12 minutes, not longer.

Peanut Butter And Chocolate

If you love peanut butter chocolate cookies – this cookie recipe with oatmeal is for you! This variety calls for a smaller serving of oats. You’ll also need to add peanut butter to the batter before blending it.

Then, stir in the chocolate chunks or chips, a pinch of salt to help the flavors pop and let the dough chill in the fridge for a few minutes. Shape the cookies and bake for 10-12 minutes.

Savory Feta Oatmeal Cookies

Now, if sometimes you want a different type of snack – something salty and cheesy, then it’s time to bake these feta cookies. The difference here is that you’ll blend all ingredients – base and feta cheese together and then bake the cookies a bit longer. The savory cookies need between 15-20 minutes to become golden.

Once you’ve gained enough experience making oatmeal cookies in your kitchen, you can venture out and try even more flavors. Here are some suggestions of add-ins and flavors:

  • Nuts and seeds! Want to add more crunch, protein and fiber to the cookies? Roughly chop some nuts or throw some seeds into the batter. These will be a great addition to the sweet flavors, especially the chocolate chip!
  • Dry fruit. Reduce the amount of sugar in the recipe and add in some dried fruit of choice! Raisins, cranberries, dried cherries or chopped prunes can all sweeten up the cookies naturally and provide more fiber!
  • Herbs and spices. Dried herbs and spices will be a great addition to the savory cookies! Think mint, oregano, black pepper or even rosemary.
  • Cinnamon. I love cinnamon and this is probably the next oatmeal cookie recipe I’ll be working on. I’m even thinking of adding some sauteed apple chunks to the dough.
  • Chocolate. If you’re a huge fan of chocolate like myself, you can a tsp of cacao to the cookie dough. Make sure to do a taste test to adjust for sweetness.

Oatmeal Chocolate Chip Cookies

  • 1 egg
  • 1 cup oats
  • 1/4 cup coconut sugar or dark brown sugar
  • 1/3 cup coconut oil
  • 1/2 tsp baking soda
  • Add-In: 1/4 cup choc chips

Blueberry Muffin Oat Cookies

  • 1 egg
  • 1 1/4 cup oats
  • 1/4 cup butter, melted
  • 2 1/2 heaping tbsp coconut sugar
  • 1/2 tsp baking soda
  • 1 1/2 tsp vanilla
  • Add-In: 1/2 cup blueberries

Peanut Butter Chocolate Oatmeal Cookies:*

  • 1 egg
  • 1/3 cup oats
  • 1/4 cup natural peanut butter
  • 1/4 cup + 1 tbsp coconut sugar
  • 1/2 tsp baking soda
  • 2 tbsp coconut oil
  • a tiny pinch of salt
  • Add-Ins: 3 tbsp chopped chocolate

Savory Feta Oatmeal Cookies**

  • 1/2 cup oats
  • 1 egg
  • 2 tbsp feta, crumbled
  • 4 tbsp butter
  • Pinch baking soda

Instructions

  1. Add the ingredients for the base to a bowl, blend with a hand blender and leave some of the mixture unblended to make for a more chewy texture later.
  2. Gently add in the extras (chocolate chips or berries) and let the dough chill in the fridge for 5-10 minutes.
