Tools to make scones

I have a few of my must-have tools to make perfect scones every time, no matter if they are sweet or savory. Here's what you need:

  • Pastry blender: This is something that is important for cutting in cold butter. Cold butter is what helps to keep your scones fluffy.
  • Silicone spatula: Great for stirring sticky scone dough. For years I used a wooden spoon but found that a spatula works so much better.
  • Bowl scraper or Bench scraper: These are worth their weight in gold when it comes to baking! A bowl scraper can be used like a bench scraper, but it is much cheaper! You can get a set of 6 bowl scrapers for under $7 on Amazon!

Ingredients for bacon cheddar scones

Ingredients are important to make bacon and cheddar scones. Use the highest quality you can find because it does make a difference!

  • 2 cups all-purpose flour
  • 2 teaspoons granulated sugar
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • ½ cup (1 stick) salted or unsalted butter, very cold, grated or cut in small pieces
  • ¾ cup buttermilk or heavy cream, plus more for brushing on top
  • 1 large egg
  • 1 cup cheddar cheese, shredded
  • 4 pieces of bacon, cooked and chopped finely
  • 2 tablespoons dried chives or fresh herbs

How to make bacon cheddar scones

Instructions to make successful scones are easy to follow and will yield cheesy, fluffy scones that are soft on the inside and have the perfect crumbly edge.

Preheat the oven to 400 degrees and prepare a baking sheet lined with parchment paper.

In a large bowl, combine together flour, sugar, salt, and baking powder.

Using a pastry blender, cut in butter until mixture is crumbly.

In a small bowl, whisk together eggs, buttermilk or cream

Add liquid ingredients, bacon, cheese, and chives to dry ingredients and stir until moistened, and the mixture is well combined and holds together

Sprinkle a small amount of flour onto parchment paper or counter

Using a sharp knife, or your bowl scraper, cut scone dough circle into 8 wedges

Divide triangles and place on a baking sheet lined with parchment paper or a silicone mat, leaving enough space for the scones to expand when cooked

Brush top with additional buttermilk or cream and place in the refrigerator for 15-30 minutes to set.

Remove from the fridge and place in preheated oven and bake for 20-25 minutes or until golden brown.

Remove from oven and cool slightly on a cooling rack. Serve warm or room temperature
