Happy September 1st! Lake cabins are closing this weekend, school is starting up again, and people are starting to spend less time outside because of the air getting cooler. Soup season is also upon us!

I'm not going to lie, last Winter sucked. We kept on getting pounded with so much snow and storms there were 7 missed school days. I'm really hoping for a mild Winter this time. I don't know if I could take another one like that. I'm really tempted to just become a snowbird and pack up my bags and bring my dogs with me to a warmer state in the South for January and February and then come back mid-March. We get snow 6 months out of the year here. (Midwest).

I'm already making all the soup recipes and remaking old soup recipes on this blog. This black bean soup couldn't be any easier and I recently updated this post with new pictures and all the good stuff for you. It took me less than 10 minutes to make and this recipe can be easily downsized. Have some black bean soup with a sandwich and salad for lunch.

Ingredients For Black Bean Soup

  • Medium onion, finely chopped - provide a sweet and savory flavor to the dish, while also helping to build the foundation of the dish with its aroma and ability to caramelize.
  • Garlic cloves - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.
  • Jalapeño, chopped
  • Chicken bouillon
  • cubes - or homemade chicken stock is fine
  • Black beans, drained - are a convenient and versatile ingredient that can be used in a variety of dishes. They are a great source of protein and fiber, and can be added to salads, soups, stews, and even dips.
  • Cumin is a member of the parsley family. It is a dried seed that is made from a plant called Cuminum cyminum.
  • Lemon Juice
  • This adds a nice burst of citrus flavor to the marinade to help enhance the choice of protein. Use freshly squeezed over bottled juice.

How to Make Black Bean Soup

In a pot, combine the first 4 ingredients; simmer for 10 minutes.

Add half a can of beans, salt and cumin; cook for 5 minutes.

Combine the cornstarch with 2 tablespoons of water and add it to the beans in the pot. Let it simmer for 2 to 3 minutes more.

Puree soup (I use an immersion blender which makes it easy to do it right in the pot).

Add the rest of the beans to the soup.

  • 1 medium onion, finely chopped

  • 2 small chicken bouillon cubes
  • 1 ½cups of water
  • 2 15 oz can of black beans, drained
  • 1 tablespoon cornstarch

    I’ve never needed WW, but have a friend that’s starting her journey. I look up recipes, make them, give some of the finished product to her!
    I had a hankering for black bean soup. Decided I’ll look on Pinterest for a WW take. This will no doubt quell my desire for Panera’s.
